fried egg salad (yam khai dao)

A practical, crunchy Thai salad recipe. Pairs with any kind of rice.

One of those dishes you make your own in a snap and which goes alongside anything. We love it just with plain brown or black rice and with Massaman Curry.

Easy to prepare, won't take long!


ingredients

5 tomatos, cut into wedges
1 onion, thinly sliced
bunch of green onions, cut
5 fried eggs, cut into 1 inch
30g unrefined palm sugar
1 tbsp soy sauce
1/2 cup tamarind concentrate (tamarind, diluted with water, no additives)


preparation

Prepare the sauce, similar to Thai Mango Salad: mix soy sauce, tamarind sauce and palm sugar palm in a pot. Turn on a low heat so the palm sugar can melt.
Cool down the sauce.
Mix the sauce with eggs, tomatoes and onions in a salad bowl.
Flavor on top with green onions.
